So imagine my surprise when I didn’t have to cook dinner today – my son did it all and it was delicious! He cooked a nice lasagna, a green salad, and cheesy garlic bread! What a nice treat – I could get used to this!

I had a large crowd over to the house on Thanksgiving – one of the largest crowds yet. There were twenty-three family members, two of which were younger than two years old. The oldest was eighty, so it was quite a variety of ages. I was really glad that my son took the initiative to get out his old Brio train set to entertain the toddlers – they set up the train set at the end of the hallway just past the bathroom, so they were out of the way. Everyone had a really good time – it truly was a miracle! So I am giving thanks for the good family gathering this Thanksgiving.

One of my favorite places to go for a good sub is Subway. It is too bad that the Subway that is closest to where I live isn’t a better one. The people that work there are way too grumpy, slow and leave a lot to be desired when it comes to Customer Service. I’d love to be a Mystery Shopper and go in there and just raise some eyebrows when I rate them unworthy of running a Subway store. At first I just thought my timing was just off with them, but each and every time I go there it is the same thing. They don’t even say thank you when you complete the transaction by placing money from my hand into theirs, which just burns me to no end.

It’s a pain to have to drive an additional 15 minutes to get the other Subway, but it’s worth the extra time and extra gas that it takes to get over there since the sandwiches even taste batter that are served to me with a smile on their face and a “thank you, please come again” which keeps me coming back just as asked.

I saw this photo of “Cinnamon Yum Yums” on a recipe web site and it gave me an idea about making easy apple dumplings.

You take a roll of refrigerated crescent roll dough and line a muffin pan with the little triangles of dough. Then you spoon a couple of heaping tablespoons of apple pie filling into each cup, fold the ends over and sprinkle with cinnamon sugar mix. Bake them for about 8 – 10 minutes in a preheated 350 oven and when they are hot, you have fast and easy apple dumplings to share at dinner.

Last time I shopped at Safeway I must have been hungry because I bought a lot of food that was not on the list. I bought it because “it looked good.” So I ended up spending a lot more money than I usually do on groceries. My father always used to say, “Don’t go grocery shopping when you are hungry.” and I think he was right. When you are hungry, a lot more things look good.

For some reason I had decided to stock up on freezer items. I bought some Stouffer entrees and a box of blueberry pancakes that you can heat up in the microwave for less than a minute and have a nice stack of soft, delicious blueberry pancakes for breakfast (in place of those two slices of hard toast). So, guess what I enjoyed for my breakfast his morning?

I used to love to eat cakes and pies in my youth, but as I’ve grown older I find that I only enjoy these sweets once in a while. Now a days it’s more like brownies and cupcakes for this old gal. One of my favorites was my mother’s pineapple upside down cake, some thing that I haven’t had in probably a decade. So I have decided that my contribution to the family Christmas dinner will be just that. It won’t be my mother’s but I’m hoping that with Betty Crocker’s help we will make a darn good one to share and enjoy on Christmas.

One of my favorite things that are a tradition in many houses and homes on Christmas morning is the discovering of all the goodies that have been gently placed in the Christmas Stockings that are usually hung from the fireplace. In our family we were allowed to dig into the Stockings while we were waiting for the folks to get up, get their robes and slippers on and to get their coffee, and of course the all important camera.

My favorite thing(s) to get in my Stocking were chocolate candies. How my parents managed to keep all the chocolate candies from melting from the heat of the roaring fire that was always going strong on Christmas Eve and then lit first thing for the “big” day, was always a mystery to me, but they did. I would be so busy eating the candies that I never had an appetite for breakfast, plus the fact of all of the excitement going on that morning, eating just wasn’t in the game plan.

This year I only bought a 12 pound turkey and I am surprised that there is very little left over from our Thanksgiving dinner. I have some leftover vegetables and a lot of pumpkin pie.The only thing I threw away was the leftover gravy. It was a little too salty for my taste and I can always open a jar of turkey gravy if anyone wants a hot turkey sandwich.

I wonder why no one wanted much pie? Perhaps they are full from the dinner itself and didn’t have room for dessert? The pie tastes great – but there are only a few slices gone.
