Maybe cabin fever is getting to all of us. The weather has been so bad the past two weeks, and I’ve been sick for half of that.
So imagine my surprise when I didn’t have to cook dinner today – my son did it all and it was delicious! He cooked a nice lasagna, a green salad, and cheesy garlic bread! What a nice treat – I could get used to this!

I had a large crowd over to the house on Thanksgiving – one of the largest crowds yet. There were twenty-three family members, two of which were younger than two years old. The oldest was eighty, so it was quite a variety of ages. I was really glad that my son took the initiative to get out his old Brio train set to entertain the toddlers – they set up the train set at the end of the hallway just past the bathroom, so they were out of the way. Everyone had a really good time – it truly was a miracle! So I am giving thanks for the good family gathering this Thanksgiving.

Tea is one of my favorite beverages. I love to drink a cup of tea in the morning when I first get up. My youngest son also enjoys tea when he first gets up. I learned to love tea when I was a little girl. My parents drank tea in the morning, the basic black pekoe tea with sugar and milk. It was a great treat to be allowed to have a sip of it in the morning!

One of my favorite places to go for a good sub is Subway. It is too bad that the Subway that is closest to where I live isn’t a better one. The people that work there are way too grumpy, slow and leave a lot to be desired when it comes to Customer Service. I’d love to be a Mystery Shopper and go in there and just raise some eyebrows when I rate them unworthy of running a Subway store. At first I just thought my timing was just off with them, but each and every time I go there it is the same thing. They don’t even say thank you when you complete the transaction by placing money from my hand into theirs, which just burns me to no end.
It’s a pain to have to drive an additional 15 minutes to get the other Subway, but it’s worth the extra time and extra gas that it takes to get over there since the sandwiches even taste batter that are served to me with a smile on their face and a “thank you, please come again” which keeps me coming back just as asked.

I saw this photo of “Cinnamon Yum Yums” on a recipe web site and it gave me an idea about making easy apple dumplings.
You take a roll of refrigerated crescent roll dough and line a muffin pan with the little triangles of dough. Then you spoon a couple of heaping tablespoons of apple pie filling into each cup, fold the ends over and sprinkle with cinnamon sugar mix. Bake them for about 8 – 10 minutes in a preheated 350 oven and when they are hot, you have fast and easy apple dumplings to share at dinner.
